Turn your microwave into a one-star restaurant
The head chef of the one-star Guide Michelin restaurant Operakällaren, Stefano Catenacci, has taken a great interest in the MicVac in-pack pasteurisation, cooking method.
The company Gooh was from the beginning jointly owned by Operakällaren and Lantmännen. Stefano wanted to produce high quality industrial food without additives and preservatives. And he did it by making the food of Operakällaren available to a wide public. The first Gooh store/restaurant was launched in 2005.
Today production capacity has been doubled. Gooh food is available for a growing public through the Gooh stores in Stockholm and through Gooh shop-in-shops in and outside of the Stockholm area. The Gooh shop-in-shop concept is a great sales success, producing among the highest sales per square metre monitored in a normal food store.
Stefano is still responsible for the development of all recipes for Gooh even if Lantmännen have taken over full ownership of the company.
